What Five might do is. . . when we get say 2 weeks to a month behind take off the exact same time that Australia does which is usually 6 weeks, therefore ensuring that we mantain a comfortable distance all the time but we also don't get to far behind.

Perhaps Five will take begin to take break during off-peak viewing figure periods, say the summer holidays?

As far as I know, H&A is filmed about eight weeks ahead of transmission (Dan F can probably confirm/correct this).  The cast and crew take a break while H&A is off the air for Summer, so the first eigth weeks or so of the new season will have been filmed before the Christmas break.

You'll notice that the year doesn't change on the closing credits for a few weeks after the new season starts. This is because the episodes were in fact filmed before the break like you said.
