The distribution company has changed over time, as well (it was Southern Star International, it's been handled by Dutch giant Endemol and their subsidiaries for some years now - more well known for owning some of the biggest gameshow formats.)

That daytime lineup is cheap as chips to produce (the talk shows, and the news, literally all share one studio!) but I don't see where the cost saving comes from not airing Home & Away?

My only explanation is it's got an audience more likely to watch 5 Star, whereas Channel 5 is now going for the older, down-market viewer with a directness that makes GB News look positively amateur hour.

It’s going to come down to advertising costs/fees and presumably Home and Away is too niche (soap aimed at a younger audience) for the Channel 5 advertisers, but fits for 5STAR, probably from the crime aspect. Make 5USA 5International and it’d fit right in.
